Raw Apple Muffins

These amazing muffins, made with NY state apples, jumbo California raisins, and walnuts are delectable, keep amazingly well (made with vegetable oil and olive oil, instead of butter) are incredible.  A long-time favorite with the staff of nearby Glimmerglass Opera for years we often call them Opera  Muffins!
